Seared Salmon with Lemon Garlic Green Beans and White Bean Mash
Pan-seared salmon fillet served over a creamy garlic white bean mash with a side of zesty lemon-tossed green beans.
INGREDIENTS
7.5 oz Salmon Fillet
0.6 cup Cannellini Beans
1 cup Green Beans
2 cloves Garlic, minced
0.5 tsp Olive Oil
1 tbsp Lemon Juice
2 tbsp Vegetable Broth
PREPARATION
Steam the green beans in a small amount of water for 4-5 minutes until tender-crisp, then drain.
In a small saucepan, heat half of the olive oil over medium heat and sauté half of the minced garlic for 1 minute until fragrant.
Add the rinsed cannellini beans and vegetable broth to the saucepan; simmer for 3 minutes, then mash with a fork or immersion blender until creamy.
Season the salmon fillet with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until cooked through and golden.
In the same skillet used for salmon (or a clean bowl), toss the steamed green beans with the remaining garlic and lemon juice.
Plate the white bean mash, top with the seared salmon, and serve the lemon garlic green beans on the side.
