Shape the mixture into a compact loaf and place it in the center of the prepared baking dish.
Lay the bacon slice over the top of the meatloaf, tucking the ends underneath the loaf.
Brush the top of the bacon with 1 tablespoon of the sugar-free BBQ sauce.
Bake for 25 minutes, then remove from the oven and brush with the remaining 1 tablespoon of BBQ sauce.
Return to the oven for an additional 5-10 minutes, or until the internal temperature reaches 165°F.
Let the meatloaf rest for 5 minutes before slicing and garnishing with finely chopped fresh parsley.
