Seared Salmon with Steamed Green Beans and Garlic Mashed Potatoes
Pan-seared salmon served with creamy garlic-infused mashed potatoes and crisp steamed green beans, finished with a bright squeeze of lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
150g Yukon Gold Potatoes, chopped
1 cup Fresh Green Beans
1/4 cup Non-fat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Place chopped potatoes in a pot of salted water, bring to a boil, and cook for 12-15 minutes until tender.
While potatoes cook, set up a steamer basket over another pot of simmering water and steam the green beans for 5-7 minutes until bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down (if applicable) and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3 minutes until the internal temperature reaches 145°F.
Drain the potatoes and return them to the pot; add the Greek yogurt and minced garlic.
Mash the potatoes until smooth and creamy, seasoning with a pinch of salt to taste.
Plate the garlic mashed potatoes and steamed green beans alongside the seared salmon, finishing with a fresh lemon wedge if desired.
