150g Sweet Potato
150g Green Beans
1 tsp Ghee
2 Garlic Cloves
1 tbsp Lemon Juice
PREPARATION
Peel and dice the sweet potato into 1-inch cubes and boil in salted water until fork-tender.
Drain the sweet potato and mash until smooth, adding a pinch of salt.
Pat the salmon fillet dry and season both sides with sea salt and black pepper.
Heat a non-stick skillet over medium-high heat with half of the ghee.
Place salmon skin-side down and sear for 4-5 minutes until the skin is golden and crisp.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from pan.
In the same pan, add the remaining ghee, green beans, and minced garlic.
Sauté the beans for 4-5 minutes until tender-crisp and fragrant.
Plate the sweet potato mash, top with the salmon, and serve the garlic green beans on the side with a squeeze of fresh lemon.
