Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over creamy cauliflower mash and garlic-sautéed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
5.5 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
1 tbsp Nutritional Yeast
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While the cauliflower steams, trim the green beans and mince the garlic.
Transfer the steamed cauliflower to a blender or food processor with the nutritional yeast and a pinch of salt, blending until smooth and creamy.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon fillet for 4-5 minutes per side until the skin is crisp and the fish is cooked through.
Remove the salmon and set aside to rest.
In the same skillet, add the remaining oil, green beans, and minced garlic, sautéing for 3-5 minutes until the beans are tender-crisp and fragrant.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
