Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon fillet served with creamy cauliflower mash and garlic-sautéed green beans, finished with a squeeze of fresh lemon for a bright, zesty touch.
INGREDIENTS
5.5 oz Salmon Fillet
2 cups Cauliflower florets
1/4 cup Nonfat Plain Greek Yogurt
1 cup Green Beans
1 tsp Olive Oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, season the salmon fillet with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until cooked through and golden.
Remove salmon and add the remaining oil to the same skillet; sauté the green beans and half of the minced garlic until the beans are crisp-tender.
Drain the steamed cauliflower and blend or mash with the Greek yogurt and the remaining minced garlic until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
