Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet over sweet potato mash and garlic green beans, finished with a bright squeeze of zesty lemon.
INGREDIENTS
8.5 oz Sockeye Salmon Fillet
175g Sweet Potato
150g Green Beans
2 tsp Olive Oil
2 cloves Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until fork-tender.
Drain the water and mash the sweet potato until smooth and velvety.
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 minutes until the edges are golden.
Flip the fillet and cook for another 3 minutes or until desired doneness is reached.
Remove the salmon and add the remaining oil and minced garlic to the same skillet.
Toss in the green beans and sauté for 5 minutes until tender-crisp and fragrant.
Serve the salmon over the sweet potato mash with the garlic green beans on the side.
