Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served over creamy garlic cauliflower mash with a side of crisp-tender green beans, finished with a squeeze of bright lemon.
INGREDIENTS
5.5 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Fresh Green Beans
2 tbsp Non-fat Greek Yogurt
1 tbsp Ghee
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of cauliflower steaming, add the green beans to the steamer basket to cook until crisp-tender.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Transfer the steamed cauliflower to a bowl or food processor; add the Greek yogurt, ghee, and minced garlic.
Mash or pulse the cauliflower mixture until creamy and smooth.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the green beans on the side with a fresh squeeze of lemon juice over everything.
