Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower

INGREDIENTS
6.5 oz Salmon Fillet
1 cup Green Beans
1.5 cups Cauliflower florets
1.5 tsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of cauliflower steaming, add the green beans to the steamer basket to cook until tender-crisp.
While vegetables steam, pat the salmon dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat. Place salmon skin-side down and sear for 4-5 minutes until skin is crisp.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Remove cauliflower from steamer and place in a bowl with minced garlic and the remaining olive oil. Mash with a fork or immersion blender until smooth.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side.
