Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic-mashed cauliflower with a side of snappy steamed green beans.
INGREDIENTS
6.2 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Bring a pot of water to a boil and place a steamer basket inside.
Add the cauliflower florets to the steamer and cook for 10-12 minutes until very soft.
Remove the cauliflower and add the green beans to the steamer, cooking for 4-5 minutes until bright green and crisp-tender.
While the vegetables steam, pat the salmon dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 minutes until the skin is golden and crisp.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached.
Place the steamed cauliflower in a food processor or bowl with the minced garlic and a pinch of salt, then blend or mash until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve alongside the steamed green beans.
