Seared Salmon Fillet with Roasted Broccoli and Garlic Cauliflower Mash
Pan-seared salmon served with oven-roasted broccoli and a creamy garlic cauliflower mash, finished with a squeeze of zesty lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Broccoli florets
1 tsp Extra Virgin Olive Oil
2 tbsp Nonfat Greek Yogurt
1 clove Garlic
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil and a pinch of salt, then roast for 15-18 minutes until the edges are slightly charred.
While the broccoli roasts, steam the cauliflower florets until they are very tender, about 10-12 minutes.
Place the steamed cauliflower into a food processor with the Greek yogurt and minced garlic, blending until smooth and creamy.
Season the salmon fillet with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crisp, then flip and cook for another 2-3 minutes until desired doneness.
Serve the salmon over the cauliflower mash with the roasted broccoli on the side.
