6.5 oz Salmon Fillet
2 cups Cauliflower Florets
1.5 cups Green Beans
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
2 cloves Garlic, minced
1 tbsp Fresh Dill, chopped
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Place the salmon fillet on the baking sheet, drizzle with half of the olive oil, and press the fresh dill onto the surface.
Roast the salmon for 12-15 minutes until it is opaque and flakes easily with a fork.
While the salmon roasts, steam the cauliflower florets in a steamer basket over boiling water for 8-10 minutes until very soft.
Transfer the steamed cauliflower to a blender or food processor, add the ghee and a pinch of sea salt, and process until creamy and smooth.
In a non-stick skillet, heat the remaining olive oil over medium heat and sauté the green beans and minced garlic for 5-6 minutes until the beans are tender-crisp.
