Crispy Golden Mac and Cheese Bites
Baked chickpea pasta shells are folded into a creamy cheese sauce and topped with panko for a satisfying golden crunch.
INGREDIENTS
2 oz Chickpea pasta
0.5 cup Nonfat Greek yogurt
1 oz Sharp cheddar cheese
2 large Egg whites
1 tbsp Nutritional yeast
2 tbsp Panko breadcrumbs
0.25 tsp Garlic powder
0.25 tsp Onion powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Olive oil
PREPARATION
Preheat your oven to 400°F and lightly grease a standard muffin tin with the olive oil.
Cook the chickpea pasta in boiling salted water for 2 minutes less than the package directions, then drain well.
In a large mixing bowl, whisk together the Greek yogurt, egg whites, nutritional yeast, garlic powder, onion powder, salt, and pepper.
Fold the cooked pasta and shredded cheddar cheese into the yogurt mixture until every shell is evenly coated.
Spoon the mixture into the prepared muffin tin slots, pressing down firmly to ensure the bites hold together.
Sprinkle the panko breadcrumbs evenly over the top of each mac and cheese portion.
Bake for 15-18 minutes until the edges are bubbling and the tops have achieved a crispy texture.
Allow the bites to cool in the tin for at least 5 minutes before gently removing them with a knife to serve.
