INGREDIENTS
7 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Green beans
0.85 tbsp Ghee
2 cloves Garlic, minced
1 tbsp Fresh lemon juice
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, pat the salmon fillet dry with a paper towel and season with sea salt and black pepper.
Heat a non-stick skillet over medium-high heat with half of the ghee.
Place the salmon skin-side down in the skillet and sear for 4-5 minutes until skin is crisp, then flip and cook for another 3 minutes.
In a separate small pan, sauté the green beans and minced garlic with the remaining ghee until the beans are tender-crisp.
Drain the steamed cauliflower and blend or mash with a splash of lemon juice and salt until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
