Golden Pan-Seared Salmon with Zesty Collard Greens Pasta
Pan-seared salmon fillet with a crispy skin served over al dente pasta tossed with vibrant, garlicky collard greens and a bright squeeze of lemon.
INGREDIENTS
5.5 oz Salmon fillet
1 tsp Olive oil
0.5 cup Cooked whole wheat pasta
1.5 cup Collard greens
1 clove Garlic
0.5 whole Lemon
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Red pepper flakes
PREPARATION
Season the salmon fillet with sea salt and black pepper on both sides.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down and sear for 4 minutes until the skin is crispy, then flip and cook for another 3 minutes.
In a separate pan, heat the remaining olive oil and sauté the minced garlic and red pepper flakes for 30 seconds.
Add the shredded collard greens to the pan and sauté until they are tender and bright green.
Toss the cooked pasta into the greens, adding the lemon juice and a tablespoon of pasta water to help the flavors combine.
Plate the pasta and greens, then top with the golden salmon fillet.
