150g Sweet Potato, peeled and cubed
125g Fresh Green Beans, trimmed

1 clove Garlic, minced
PREPARATION
Place the cubed sweet potatoes in a steamer basket over boiling water and cook for 12-15 minutes until very tender.
While potatoes steam, heat a non-stick skillet over medium-high heat with half of the olive oil.
Season the salmon fillet with sea salt and black pepper, then place in the hot skillet skin-side up.
Sear the salmon for 4-5 minutes per side until the exterior is golden and the fish flakes easily with a fork.
In a separate small pan, heat the remaining olive oil over medium heat and sauté the minced garlic for 30 seconds until fragrant.
Add the green beans to the garlic pan with a splash of water, cover, and steam-sauté for 5 minutes until crisp-tender.
Transfer the cooked sweet potatoes to a bowl, add the ghee, and mash until smooth and creamy.
Plate the salmon alongside the sweet potato mash and garlic green beans, serving immediately with an optional lemon wedge.
