Seared Salmon Fillet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served over a creamy garlic cauliflower mash with crisp steamed green beans, finished with a silky ghee glaze.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
2 tsp Extra Virgin Olive Oil
1 tsp Grass-fed Ghee
2 tbsp Nonfat Plain Greek Yogurt
1 clove Garlic, minced
Sea salt and black pepper to taste
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
Add green beans to the steamer during the last 5 minutes of cooking until they are bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor or bowl, adding the Greek yogurt, ghee, and minced garlic.
Blend or mash the cauliflower until smooth and creamy, then season with sea salt and pepper.
Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side down and sear for 4-5 minutes until the skin is golden and crispy.
Flip the fillet and cook for an additional 2-3 minutes until the salmon is cooked through to your preference.
Spoon the garlic cauliflower mash onto a plate, top with the seared salmon, and serve the green beans alongside.
