1 cup Broccoli florets

PREPARATION
Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
Mince the garlic cloves and combine them in a small bowl with the dried rosemary, dried thyme, sea salt, and black pepper.
Pat the beef roast dry with a paper towel. Rub half of the olive oil and half of the garlic-herb mixture over all sides of the beef.
Place the beef roast in the center of the prepared baking sheet.
In a separate bowl, toss the broccoli florets and sliced carrots with the remaining olive oil and the rest of the garlic-herb seasoning.
Arrange the vegetables in a single layer around the beef on the baking sheet.
