PREPARATION
Preheat oven to 325°F (160°C) and grease a small 4-inch springform pan or ramekin.
Crush one chocolate cookie and mix with almond flour; press firmly into the bottom of the pan to form the crust.
In a medium bowl, whisk together Greek yogurt, protein powder, egg white, vanilla extract, and monk fruit until smooth.
Divide the batter into two bowls; stir the dark cocoa powder into one half to create a chocolate layer.
