5.5 oz Salmon Fillet
120g Sweet Potato
100g Green Beans
1.5 tsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Peel and cube the sweet potato then boil in a pot of water until fork-tender.
Drain the sweet potato and mash thoroughly with a pinch of sea salt until creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 to 5 minutes until a golden crust forms.
Flip the salmon and cook for another 3 to 4 minutes until cooked through then remove from the pan.
Add the remaining olive oil to the same skillet along with the green beans and minced garlic.
Sauté the beans for 5 minutes until tender-crisp and fragrant.
Plate the salmon over the sweet potato mash and serve with the garlic green beans on the side.
