Seared Salmon with Roasted Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic cauliflower mash with roasted broccoli florets and a bright squeeze of lemon.
INGREDIENTS
5.3 oz Salmon Fillet
1.1 cups Broccoli Florets
2 cups Cauliflower florets
1 tsp Extra Virgin Olive Oil
2 tbsp Non-Fat Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil and a pinch of sea salt, then spread them on the baking sheet and roast for 18-20 minutes until the edges are crisp.
While the broccoli roasts, steam the cauliflower florets until they are very tender, approximately 10-12 minutes.
Place the steamed cauliflower into a food processor along with the Greek yogurt, minced garlic, and a pinch of salt, then blend until the texture is velvety and smooth.
Season the salmon fillet with salt and pepper on both sides.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 minutes, then flip and cook for an additional 3-4 minutes until the fish is flaky and cooked through.
Plate the salmon over a generous bed of the garlic cauliflower mash and serve with the roasted broccoli on the side.
