Crispy Sesame Chicken Fried Rice
Sautéed chicken breast and crisp vegetables tossed with fluffy rice and a savory sesame glaze for a satisfying, golden-brown finish.
INGREDIENTS
5 oz chicken breast
0.33 cup cooked brown rice
1 large egg
0.25 cup frozen peas and carrots
1 tsp toasted sesame oil
1 tsp extra virgin olive oil
1 tbsp tamari
0.5 tsp garlic powder
0.5 tsp ground ginger
1 stalk green onion
0.5 tsp sesame seeds
0.13 tsp sea salt
0.13 tsp black pepper
PREPARATION
Dice the chicken breast into bite-sized pieces and season evenly with sea salt, black pepper, garlic powder, and ground ginger.
Heat the extra virgin olive oil in a large non-stick skillet or wok over medium-high heat.
Add the chicken to the skillet and cook for 5-6 minutes until golden-brown and cooked through, then move the chicken to one side of the pan.
Crack the egg into the empty side of the skillet and scramble quickly until set.
Add the cooked brown rice, frozen peas and carrots, and toasted sesame oil to the pan.
Stir-fry all ingredients together for 3-4 minutes, allowing the rice to get slightly crispy and the vegetables to tenderize.
Pour in the tamari and toss well to coat everything in the savory sauce.
Remove from heat and stir in the sliced green onion.
Serve warm, garnished with sesame seeds for an extra crunch.
