1 tbsp Feta Cheese
1/4 medium Avocado

1 slice Sprouted Grain Bread
PREPARATION
Slice the turkey sausage into small rounds and toast the sprouted grain bread.
Heat the olive oil in a medium non-stick skillet over medium-high heat.
Add the turkey sausage to the pan and sauté for 2-3 minutes until lightly browned.
Toss in the baby spinach and cook for 1 minute until just wilted, then remove the sausage and spinach from the pan and set aside.
Lower the heat to medium and pour the egg whites into the same skillet.
Let the egg whites cook undisturbed for 2 minutes until the edges are set and the center is mostly firm.
Place the sausage, spinach, and feta cheese onto one half of the omelet.
