6 oz Wild Sockeye Salmon Fillet
2 cups Cauliflower florets
1 cup fresh Green Beans
2 tbsp Non-fat Greek Yogurt
1 tsp Grass-fed Butter
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until tender-crisp and bright green.
Transfer the steamed cauliflower to a bowl or food processor, adding the Greek yogurt, grass-fed butter, and minced garlic.
Mash or pulse the cauliflower until smooth and creamy, then season with a pinch of sea salt and black pepper.
Pat the salmon fillet completely dry with a paper towel and season the skinless side with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan and sear for 4-5 minutes on the first side to develop a golden crust, then flip and cook for another 2-3 minutes until desired doneness.
Plate the garlic mashed cauliflower and green beans alongside the seared salmon and serve immediately.
