Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic-mashed cauliflower with a side of tender steamed asparagus, finished with a squeeze of zesty lemon.
INGREDIENTS
6.5 oz Salmon Fillet
1.5 cups Cauliflower florets
10 stalks Asparagus
2 tsp Olive Oil
0.5 tbsp Ghee
1 tbsp Nonfat Greek Yogurt
1 clove Garlic, minced
PREPARATION
Place a steamer basket in a large pot with an inch of water and bring to a boil.
Add the cauliflower florets to the basket, cover, and steam for 10-12 minutes until very tender.
During the last 4 minutes of steaming, add the asparagus stalks to the basket and cook until bright green and tender-crisp.
Transfer the steamed cauliflower to a bowl or food processor and blend with ghee, Greek yogurt, minced garlic, and a pinch of salt until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet and sear for 4-5 minutes per side until the exterior is golden and the fish flakes easily with a fork.
Serve the seared salmon over a bed of garlic cauliflower mash with the steamed asparagus on the side.
