PREPARATION
In a small saucepan, bring the water and sea salt to a boil.
Slowly whisk in the grits, reduce heat to low, cover, and simmer for 15-20 minutes until creamy, stirring occasionally.
Stir the ghee into the finished grits and keep warm.
Pat the shrimp dry and season with black pepper and smoked paprika.
Heat the olive oil in a large skillet over medium-high heat.
Add the shrimp and garlic to the skillet, sautéing for 2-3 minutes until the shrimp are pink and opaque.
Stir in the lemon juice and remove from heat.
