Creamy Baked Ziti with Golden Mozzarella Crust
Tender chickpea ziti and lean ground turkey baked in a creamy tomato-yogurt sauce, topped with a bubbly, golden mozzarella crust.
INGREDIENTS
4 oz Ground turkey
1.5 oz Chickpea ziti pasta
0.5 cup Tomato puree
0.25 cup Non-fat Greek yogurt
0.75 oz Part-skim mozzarella cheese
1 tbsp Parmesan cheese
1 cup Fresh baby spinach
1 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Dried oregano
1 clove Garlic
PREPARATION
Preheat your oven to 375°F (190°C).
Cook the chickpea ziti in a pot of boiling water for 2 minutes less than the package instructions suggest to keep it al dente; drain and set aside.
In a large skillet over medium heat, add the olive oil and brown the ground turkey with minced garlic, sea salt, and black pepper until the meat is fully cooked and no longer pink.
Add the fresh baby spinach to the turkey and stir until the leaves are just wilted, then remove the skillet from the heat.
In a small mixing bowl, whisk together the tomato puree, Greek yogurt, and dried oregano until a smooth, creamy sauce forms.
Combine the cooked pasta, turkey and spinach mixture, and the creamy tomato sauce in a small baking dish, stirring until everything is evenly coated.
Sprinkle the shredded mozzarella and parmesan cheese over the top of the pasta mixture.
Place the dish in the oven and bake for 15-20 minutes until the cheese is melted and the edges are bubbling and golden.
