Seared Salmon with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over a creamy cauliflower mash with crisp-tender green beans and a squeeze of fresh lemon.
INGREDIENTS
5.3 ounces Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
1 teaspoon Extra Virgin Olive Oil
1 clove Garlic
1 tablespoon Lemon Juice
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very soft.
While cauliflower steams, season the salmon fillet with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until cooked through.
Steam the green beans for 5-6 minutes until they are bright green and crisp-tender.
Drain the cauliflower and transfer to a blender or food processor with the garlic and half of the lemon juice; blend until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve with the green beans and a final drizzle of lemon juice.
