Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic cauliflower mash with a side of steamed green beans that are vibrantly crisp.
INGREDIENTS
6 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
2 tablespoons Non-fat Greek yogurt
2 teaspoons Extra virgin olive oil
2 cloves Garlic
PREPARATION
Steam the cauliflower florets and garlic cloves until very tender, about 10-12 minutes.
While cauliflower steams, steam the green beans for 5-6 minutes until bright green and crisp-tender.
Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached.
Drain the steamed cauliflower and garlic, then transfer to a blender or use a potato masher.
Add the Greek yogurt and the remaining teaspoon of olive oil to the cauliflower and blend until smooth and creamy.
Plate the garlic cauliflower mash, top with the seared salmon, and serve with the steamed green beans.
