Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over smooth cauliflower mash with garlic-sautéed green beans, finished with a squeeze of lemon for a bright, zesty finish.
INGREDIENTS
7 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green beans
2 cloves Garlic, minced
1 tsp Olive oil
1 tsp Grass-fed ghee
PREPARATION
Steam the cauliflower florets until very tender, then drain thoroughly and mash with grass-fed ghee and a pinch of salt until smooth.
Heat olive oil in a non-stick skillet over medium-high heat and season the salmon fillet with salt and pepper.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes.
Remove the salmon from the pan and let it rest while you sauté the green beans and minced garlic in the same skillet for 5 minutes until tender-crisp.
Plate the salmon over the cauliflower mash with the green beans on the side and finish with a fresh squeeze of lemon juice.
