Golden Crispy Salmon Sushi Bake
Oven-baked salmon and fluffy rice layered with a creamy sriracha-yogurt sauce, served in crisp nori sheets for a satisfying crunch.
INGREDIENTS
5 oz salmon fillet
0.5 cup cooked white rice
2 tbsp plain Greek yogurt
1 tsp sriracha
1 tbsp coconut aminos
0.25 whole avocado
0.5 cup cucumber
2 whole nori sheets
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp sesame seeds
PREPARATION
Preheat your oven to 400°F and line a small baking dish with parchment paper.
Season the salmon fillet with sea salt and black pepper, then bake for 12-15 minutes until it flakes easily.
While the salmon bakes, dice the cucumber and slice the avocado into thin pieces.
Remove the salmon from the oven and use two forks to shred it into small flakes in a mixing bowl.
Stir the Greek yogurt, sriracha, and coconut aminos into the shredded salmon until well combined.
Press the cooked white rice firmly into the bottom of the baking dish, then spread the salmon mixture evenly over the top.
Return the dish to the oven for 5-8 minutes until the top is golden and bubbling.
Cut the nori sheets into small squares and serve the warm sushi bake inside the nori, topped with fresh avocado, cucumber, and sesame seeds.
