Seared Salmon with Steamed Broccoli and Garlic Cauliflower Mash
Pan-seared salmon served over garlic cauliflower mash and steamed broccoli, finished with a bright squeeze of lemon for a zesty, fresh aroma.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Broccoli florets
1 tbsp Nonfat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of cauliflower steaming, add the broccoli florets to the steamer basket and cook until bright green and crisp-tender.
Transfer the steamed cauliflower to a blender or food processor with the minced garlic and Greek yogurt, then pulse until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until opaque throughout.
Spoon the cauliflower mash onto a plate, top with the seared salmon, and serve the steamed broccoli on the side with an optional squeeze of fresh lemon.
