Spicy Chili-Garlic Pork Dan Dan Noodles
Sautéed ground pork and tender bok choy tossed with buckwheat noodles in a silky, spicy chili-garlic tahini sauce.
INGREDIENTS
5 oz Ground pork
2 oz Soba noodles
1 cup Bok choy
1.25 tbsp Tamari
0.25 tsp Chili oil with flakes
0.5 tbsp Tahini
1 tsp Garlic
1 tsp Ginger
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Green onions
PREPARATION
Boil water in a medium pot and cook the soba noodles for 4 to 5 minutes until al dente, then drain and set aside.
In a small mixing bowl, whisk together the tahini, tamari, and chili oil until the sauce is smooth and combined.
Heat a large skillet over medium-high heat and add the ground pork, seasoning with sea salt and black pepper.
Cook the pork until browned, breaking it into small crumbles with a wooden spoon.
Stir in the minced garlic and ginger, sautéing for about 1 minute until the mixture becomes fragrant.
Add the chopped bok choy to the skillet and cook for 2 minutes until the leaves are wilted and the stems are tender-crisp.
Add the cooked soba noodles and the tahini sauce to the skillet, tossing everything together until the noodles are well coated.
Garnish with fresh sliced green onions and serve immediately.
