Seared Salmon Fillet with Roasted Sweet Potatoes and Asparagus
Pan-seared salmon fillet served with tender roasted sweet potato cubes and charred asparagus, finished with a bright squeeze of lemon and flaky sea salt.
INGREDIENTS
6.5 oz Wild Atlantic Salmon Fillet
1.5 cups Sweet Potato, cubed
1 cup Asparagus spears
1 tsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
0.25 tsp Sea Salt
0.25 tsp Black Pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes with half of the olive oil and a pinch of salt, then roast for 15 minutes.
Add the asparagus to the baking sheet, drizzle with the remaining oil, and roast for another 10 minutes until tender.
While vegetables roast, season the salmon fillet with salt and pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and cooked through.
Plate the salmon alongside the roasted vegetables and finish with a fresh squeeze of lemon juice.
