Seared Salmon Fillet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic cauliflower mash with crisp-tender green beans and a squeeze of fresh lemon.
INGREDIENTS
9 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
2 tbsp Non-fat Greek yogurt
1 tsp Olive oil
1 clove Garlic
PREPARATION
Steam the cauliflower florets in a basket over boiling water until very tender, about 10-12 minutes.
While cauliflower steams, steam the green beans in a separate basket for 5-7 minutes until they are bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor or bowl; add the Greek yogurt, minced garlic, salt, and pepper, then blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the hot skillet skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145 degrees Fahrenheit and the fish flakes easily.
Plate the garlic cauliflower mash first, top with the seared salmon, and serve the green beans on the side with an optional squeeze of fresh lemon.
