6 oz salmon fillet
1 cup broccoli florets
0.5 cup red bell pepper
0.5 tbsp extra virgin olive oil
1 tbsp dijon mustard
1 tbsp almond flour
0.25 tsp dried parsley
0.25 tsp garlic powder
0.13 tsp sea salt
0.13 tsp black pepper
0.5 whole lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
Place the broccoli florets and sliced red bell peppers on one side of the baking sheet, drizzle with olive oil, and sprinkle with half of the sea salt and black pepper.
Place the salmon fillet on the other side of the baking sheet and spread the Dijon mustard evenly over the top of the fish.
In a small ramekin, combine the almond flour, dried parsley, garlic powder, and the remaining salt and pepper.
Press the almond flour mixture firmly onto the mustard-coated salmon to create an even crust.
Roast in the center of the oven for 12 to 15 minutes, or until the vegetables are tender-crisp and the salmon flakes easily with a fork.
