PREPARATION
Preheat your oven to 400°F (200°C) and prepare a large rimmed baking sheet.
Finely mince the garlic cloves and place them in a small bowl.
Add the dried rosemary, dried thyme, sea salt, black pepper, and half of the olive oil to the garlic, stirring to create a thick paste.
Pat the beef roast dry with a paper towel and rub the garlic-herb paste evenly over all sides of the meat.
Slice the carrots into thin rounds and place them on the baking sheet along with the broccoli florets.
Drizzle the remaining olive oil over the vegetables and toss well to ensure they are lightly coated.
Nestle the beef roast in the center of the baking sheet, surrounding it with the prepared vegetables.
