6.5 oz Wild Salmon Fillet
250g Cauliflower Florets
125g Green Beans
1 tbsp Extra Virgin Olive Oil
2 Garlic Cloves, minced
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very tender.
Add the green beans to the steamer during the last 5 minutes of cooking so they remain crisp-tender.
While vegetables steam, pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Transfer the steamed cauliflower to a bowl or food processor, add the remaining olive oil and minced garlic, and mash or blend until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side with a fresh lemon wedge.
