INGREDIENTS
7 oz salmon
1 cup cauliflower rice
0.25 whole avocado
2 sheet nori
1 tbsp rice vinegar
0.5 cup cucumber
1 tsp fresh ginger
1 tbsp lemon juice
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Sauté the cauliflower rice in a pan over medium heat for 5 minutes until tender, then stir in the rice vinegar and grated ginger.
Slice the salmon into long, thin strips and toss with lemon juice, sea salt, and black pepper.
Julienne the cucumber and slice the avocado into thin wedges.
Place a sheet of nori on a bamboo rolling mat or flat surface and spread half of the cauliflower rice evenly over the bottom two-thirds.
Layer half of the salmon, cucumber, and avocado across the center of the rice.
Carefully roll the nori tightly from the bottom, using a dab of water to seal the edge.
Repeat with the second sheet and slice each roll into 6-8 pieces using a sharp, wet knife.
