0.5 scoop vanilla whey protein powder
0.5 cup liquid egg whites
0.5 cup non-fat Greek yogurt
0.5 tsp baking powder
0.25 tsp ground cinnamon
0.25 tsp sea salt
1 medium banana
1 tsp ghee
0.5 tsp vanilla extract
PREPARATION
Place the rolled oats in a high-speed blender and pulse until they reach a fine flour-like consistency.
Add the protein powder, liquid egg whites, Greek yogurt, baking powder, cinnamon, sea salt, vanilla extract, and half of the banana to the blender.
Blend on medium-high until the batter is completely smooth and thick.
Slice the remaining half of the banana into thin rounds.
Heat the ghee in a large non-stick skillet over medium-low heat.
Pour the batter into the skillet to form three or four medium pancakes.
Immediately press the banana slices into the wet surface of each pancake.
Cook for 3-4 minutes until bubbles form on the surface and the edges look set.
Carefully flip the pancakes and cook for another 2 minutes until the bananas are golden and caramelized and the pancakes are cooked through.
Serve warm, optionally topped with an extra dollop of Greek yogurt.
