Seared Salmon with Herbed Orzo and Steamed Broccoli
Pan-seared salmon fillet served over a bed of lemon-herb orzo and tender steamed broccoli, finished with a bright and zesty squeeze of fresh lemon.
INGREDIENTS
4 oz Salmon Fillet
50g Dry Orzo
1 cup Broccoli florets
1 tsp Extra Virgin Olive Oil
1 tbsp Fresh Parsley, chopped
1 tbsp Lemon Juice
PREPARATION
Bring a small pot of salted water to a boil and cook the orzo until al dente, about 8 to 9 minutes.
While the orzo cooks, place the broccoli florets in a steamer basket over boiling water and steam for 5 minutes until tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the skillet and sear for 4 minutes until a golden crust forms, then flip and cook for another 3 minutes.
Drain the cooked orzo and toss it in a bowl with the chopped fresh parsley and lemon juice.
Plate the herbed orzo and top with the seared salmon, serving the steamed broccoli on the side.
