Seared Salmon Fillet with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with garlic-sautéed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
8.5 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
2 tbsp Non-fat Greek Yogurt
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
Salt, black pepper, and lemon wedges to taste
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, season the salmon fillet with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until cooked through and golden.
Remove salmon and in the same pan, sauté the green beans and minced garlic for 5 minutes until tender-crisp.
Drain the cauliflower and mash or blend with the Greek yogurt until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side with a fresh lemon wedge.
