Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over creamy cauliflower mash with crisp garlic-sauteed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Green Beans
1.5 tsp Olive Oil
2 tbsp Greek Yogurt
2 cloves Garlic
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until they are very tender, approximately 10 to 12 minutes.
Transfer the steamed cauliflower to a food processor or blender along with the Greek yogurt and a pinch of sea salt, blending until the mixture is velvety smooth.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until a golden crust forms and it is cooked to your preference.
Remove the salmon from the pan and set it aside to rest.
In the same skillet, add the remaining olive oil, minced garlic, and green beans, sautéing for 5 minutes until the beans are tender-crisp and the garlic is fragrant.
Plate the creamy cauliflower mash, top with the seared salmon, and serve with the garlic green beans and an optional lemon wedge.
