Golden Caramelized Banana Pancakes
Pan-seared oat and Greek yogurt pancakes topped with buttery caramelized bananas that offer a luscious, melt-in-your-mouth texture.
INGREDIENTS
0.5 cup Liquid egg whites
0.5 cup Non-fat Greek yogurt
0.33 cup Rolled oats
0.5 scoop Vanilla protein powder
1 tsp Ground cinnamon
0.5 tsp Baking powder
1 whole Small banana
1 tsp Coconut oil
1 tsp Pure maple syrup
PREPARATION
Add the rolled oats to a high-speed blender and pulse until they reach a fine, flour-like consistency.
Add the liquid egg whites, non-fat Greek yogurt, vanilla protein powder, ground cinnamon, and baking powder to the blender and process until the batter is completely smooth.
Peel the small banana and slice it into 1/4-inch thick rounds.
Heat a non-stick skillet over medium heat and lightly coat the surface with 0.5 tsp of coconut oil.
Pour the batter into the skillet to form three or four small pancakes, cooking for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2 minutes until golden.
Remove the pancakes from the pan and set aside on a plate.
Add the remaining 0.5 tsp of coconut oil and the pure maple syrup to the same skillet over medium-high heat.
Place the banana slices in the skillet and sear for 1 minute per side until they become deeply golden and caramelized.
Top the pancakes with the warm caramelized bananas and serve immediately.
