0.5 tbsp Ghee
1 medium Sweet potato
1 cup Asparagus
0.5 tbsp Olive oil
0.5 tsp Sea salt
0.5 tsp Black pepper
0.5 tsp Garlic powder
1 tbsp Lemon juice
1 tsp Lemon zest
1 tbsp Fresh parsley
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Peel and cube the sweet potato, then toss with olive oil and half of the sea salt and black pepper.
Spread the sweet potatoes on the baking sheet and roast for 15 minutes.
Trim the woody ends of the asparagus and add them to the baking sheet, roasting for another 10 minutes until the vegetables are tender.
