150g Sweet Potato
100g Green Beans
2 tsp Avocado Oil

PREPARATION
Preheat your oven to 400°F (200°C).
Scrub the sweet potato and poke several holes in it with a fork. Place it on a baking sheet and roast for 40-50 minutes until tender.
While the potato is roasting, trim the ends of the green beans.
Steam the green beans over boiling water for 5-7 minutes until they are vibrant and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy.
Carefully flip the salmon and cook for another 2-3 minutes until cooked through to your preference.
Slice the roasted sweet potato open and serve alongside the salmon and steamed green beans.
