INGREDIENTS
5 oz Chicken breast
0.5 cup Cooked brown rice
1 large Egg
0.25 cup Frozen peas
0.25 cup Diced carrots
2 stalk Green onions
1 tsp Toasted sesame oil
1 tbsp Tamari
1 tsp Minced garlic
1 tsp Grated ginger
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Sesame seeds
PREPARATION
Heat a large skillet or wok over medium-high heat with half of the toasted sesame oil.
Season the diced chicken breast with sea salt and black pepper, then sauté until golden and cooked through.
Remove the chicken from the pan and add the remaining toasted sesame oil, minced garlic, and grated ginger.
Stir in the frozen peas, diced carrots, and the white parts of the sliced green onions until tender.
Push the vegetables to the side of the pan, crack the egg into the center, and scramble until fully set.
Add the chilled brown rice and cooked chicken back to the pan, breaking up any rice clumps with a spatula.
Pour in the tamari and toss everything together over high heat until the rice is slightly crispy and well combined.
Garnish with sesame seeds and the remaining green onion tops before serving warm.
