Seared Salmon with Steamed Green Beans and Garlic Mashed Potatoes
Pan-seared salmon served over creamy garlic mashed potatoes with a side of tender steamed green beans and a bright, zesty finish.
INGREDIENTS
6 oz Salmon Fillet
120g Yellow Potato
100g Green Beans
2 tbsp Non-fat Greek Yogurt
1 clove Garlic
PREPARATION
Peel and chop the yellow potato into small cubes, then boil in salted water until tender, about 12-15 minutes.
While potatoes boil, place a steamer basket over another pot of simmering water and steam the green beans for 5-7 minutes until vibrant green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon skin-side up for 4 minutes, then flip and cook for another 3-4 minutes until cooked through.
Drain the potatoes and mash them with the Greek yogurt and minced garlic until smooth and creamy.
Plate the garlic mash, top with the seared salmon, and serve the steamed green beans on the side with an optional squeeze of fresh lemon.
