Zesty Peanut Chicken Noodles
Sautéed chicken and buckwheat soba noodles tossed in a creamy, zesty peanut sauce with crisp snap peas and peppers.
INGREDIENTS
4 oz chicken breast
1.5 oz soba noodles
1 tbsp natural peanut butter
1 tbsp tamari
1 tbsp lime juice
1 tsp fresh ginger
1 clove garlic
0.5 cup red bell pepper
0.5 cup snap peas
1 tbsp green onions
0.25 tsp red pepper flakes
1 tsp sesame oil
PREPARATION
Bring a pot of water to a boil and cook the soba noodles according to package directions, then drain and rinse with cold water.
In a small mixing bowl, whisk together the peanut butter, tamari, lime juice, grated ginger, and red pepper flakes until the sauce is smooth.
Heat the sesame oil in a large skillet or wok over medium-high heat.
Add the diced chicken breast to the skillet and sauté until golden brown and cooked through.
Stir in the minced garlic, sliced red bell pepper, and snap peas, cooking for 3 minutes until the vegetables are tender-crisp.
Add the cooked soba noodles and the peanut sauce to the skillet, tossing everything together for 1-2 minutes until well-coated and hot.
Garnish with thinly sliced green onions before serving.
