Seared Salmon with Garlic Spinach and Sweet Potato Mash
Pan-seared salmon served over a velvety sweet potato mash with garlicky spinach and a squeeze of lemon for a bright, zesty finish.
INGREDIENTS
5.5 ounces Salmon Fillet
150 grams Sweet Potato
2 cups Fresh Spinach
2 teaspoons Avocado Oil
2 cloves Garlic
1 tablespoon Lemon Juice
PREPARATION
Peel and cube the sweet potato then boil in salted water until tender.
Drain the potatoes and mash until smooth seasoning with a pinch of sea salt.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat one teaspoon of avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes until the exterior is golden and crisp.
Flip the salmon and cook for another 2-3 minutes until cooked through then remove from pan to rest.
In the same pan add the remaining teaspoon of avocado oil and the minced garlic sautéing until fragrant.
Add the fresh spinach to the pan and toss until just wilted then finish with a squeeze of lemon juice.
Plate the sweet potato mash top with the garlic spinach and place the seared salmon on top.
